Pinnacle Peak Patio Cowboy Beans



  • 1 pound pinto beans
  • 1 small ham hock
  • Salt, to taste
  • 1 small onion, chopped
  • 1 tablespoon chopped green chiles
  • Pinch of whole leaf oregano


  1. Soak beans in water overnight.
  2. Add remaining ingredients. Cook for 4 to 5 hours over medium heat or until beans are tender.

Serves 6 to 8 people.
