Pita Jungle Green Beans

Yield: 6 servings

Ingredients

  • 1/2 cup extra-virgin olive oil
  • 2 medium onions, chopped
  • 4 cloves garlic, chopped
  • 1 to 1 1/2 pounds French green beans, fresh or frozen (not canned)
  • 4 medium ripe tomatoes, chopped in quarters
  • Salt and pepper

Instructions

  1. In a large frying pan with a lid, heat olive oil over medium heat. Add onions and garlic, cover and sauté them until the onions are translucent, about 10 to 15 minutes. (Don't let them brown.)
  2. Add tomatoes, green beans and salt and pepper to taste. Turn up the heat slightly. Cook, stirring gently every few minutes without damaging the green beans and until the tomatoes are very soft and the green beans are tender.
  3. Cool before serving.
  4. This dish is traditionally served cold, so you can refrigerate it, then serve. Eat the green beans alone or put them in small pita pockets.

Notes

To French-cut green beans, cut them in half lengthwise along the flat part between the bean's seam.
