Thrift City Taco Salad

  • 1 pound ground beef (or vegetable beef crumbles)
  • Chopped onion
  • 1 envelope taco seasoning mix (plus water called for on envelope)


  • 1 can Old El Paso mild enchilada sauce
  • Catalina salad dressing


  • 3-4 cups romaine lettuce, chopped
  • 3-4 cups iceberg lettuce, chopped
  • Nacho Cheese Doritos (has to be Doritos), crumbled
  • Shredded Colby/jack cheese (Cheddar)
  • Chopped onion
  • Chopped tomato
  • Sliced black olives
  • Sliced avocado (if desired)


  1. Brown beef with some chopped onion. Drain and add taco seasoning and water. Simmer until water is absorbed. stirring well. Set aside.
  2. Pour the can of enchilada sauce in a bowl. Fill the empty can with Catalina dressing and add to the enchilada sauce. Can be doubled or tripled depending on what size salad you're making. Just use equal parts of the sauce and dressing.
  3. In a flat bowl layer romaine and iceberg lettuce, seasoned beef, chopped onion, chopped tomato, sliced black olives, sliced avocado (if using), Doritos and shredded cheese.
  4. Serve with dressing/sauce ladled over the top.
