United Airlines Carrot Cake

Ingredients

Cake

  • 1 1/2 cups corn oil
  • 2 cups granulated sugar
  • 3 eggs
  • 1 1/2 cups grated carrot
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 3/4 cup chopped walnuts

Cream Cheese Icing

  • 6 ounces butter
  • 8 ounces cream cheese
  • 2 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

Cake

  1. Heat oven to 350 degrees F. Line a 13 x 9 inch baking pan with wax paper.
  2. Mix all ingredients just until well blended. Pour batter into prepared pan. Bake for 50 minutes. Cool.
  3. Ice with Cream Cheese Icing.

Cream Cheese Icing

  1. Cream butter and cream cheese. Beat in remaining ingredients until fluffy.
