Dr. Ben and Candy Carson's Coconut Spinach



Coconut Spinach

  • 1 pound frozen spinach
  • 2 tablespoons coconut oil
  • 1/4 cup onion, chopped
  • 1/4 teaspoon salt


  • 1 teaspoon ginger
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup cashews


  1. Melt coconut oil in skillet, and sauté onion until translucent or soft.
  2. Add spinach, salt and other seasonings, if desired. Stir and simmer for 5-10 minutes.
