Potato Pancakes

Ingredients

  • 2 cups leftover mashed potatoes
  • 2 tablespoons flour
  • 1 egg
  • Margarine

Instructions

  1. Adjust the ingredients to what you have on hand.
  2. Mix first three ingredients.
  3. Make into patties and fry in margarine until golden brown on each side.
  4. Serve warm with butter or margarine.

Delicious served with applesauce.
