Union Pacific Chili



  • 4 pounds ground beef
  • 1 small onion, chopped
  • 2 cloves garlic
  • 5 tablespoons chili powder
  • 8 tablespoons flour
  • 3 teaspoons kosher or sea salt
  • 2 tablespoons cumin
  • 1/4 teaspoons baking soda
  • 1 tall can tomato juice
  • 1 tall can water
  • 3 cups cooked pinto beans


  1. Brown ground beef, onion and garlic, then add chili powder, flour, salt, cumin and baking soda.
  2. Add tomato juice, water and beans. Simmer for 30 minutes.
