Season's Best Spinach Dip

This delicious and festive looking dip gets a head start by using McCormick® Hollandaise Sauce Blend. It can be made ahead and reheated to avoid the last minute rush.

Season's Best Spinach Dip

Prep: 10 min | Cook: 10 min | Yield: 24 (2 tablespoon) servings

Ingredients

  • 1/4 cup (1/2 stick) butter
  • 1 package McCormick® Hollandaise Sauce Mix
  • 3/4 cup milk
  • 1 (10 ounce) package frozen chopped spinach, thawed, drained and squeezed dry
  • 1 (4 ounce) jar diced pimientos, drained
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon McCormick® Dill Weed
  • 1 cup sour cream

Instructions

  1. Melt butter in small saucepan on medium heat.
  2. Stir in Sauce Mix.
  3. Gradually stir in milk.
  4. Bring to boil, stirring constantly. Reduce heat to low; simmer for 1 minute or until thickened, stirring constantly.
  5. Stir in spinach, pimientos, Parmesan cheese and dill.
  6. Cook until cheese is melted and sauce is well blended, stirring frequently.
  7. Remove from heat.
  8. Add sour cream; stir until smooth.

Notes

Microwave instructions: Microwave Sauce Mix, milk and butter in a 2 1/2 quart microwaveable bowl on HIGH for 2 minutes until thickened, stirring after 1 minute.

Stir in remaining ingredients until well blended. Microwave on HIGH for 2 minutes until heated through, stirring after 1 minute. Dip will thicken upon standing.

Serving suggestion: Serve dip in decorative bowl with assorted crackers or in hollowed-out round bread loaf.

Make ahead: Dip may be prepared 1 day ahead; cover and refrigerate. Bake, covered, in a 1 quart baking dish in preheated 350 degrees F oven for 20 minutes or until heated through.
