Shrimp Christmas Tree

Method

  1. Tree: Thaw frozen shrimp.
  2. Place shrimp in boiling salted water. Cover and simmer about 5 minutes or until shrimp are pink and tender. Drain.
  3. Peel shrimp leaving the tail section of shell on.
  4. Remove veins and wash.
  5. Chill.
  6. Separate and wash endive.
  7. Chill.
  8. Starting at base of cone and working up, cover cone with overlapping leaves of endive and fasten with toothpick halves.
  9. Cover fully with leaves to resemble a Christmas tree.
  10. Attach shrimp to tree with wooden picks.
  11. Cocktail Sauce: Combine ingredients and chill.
