Cranberry Pound Cake

Yield: 8 to 10 servings

Ingredients

Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • Salt to taste
  • 2 eggs
  • 3 tablespoons butter
  • 1 cup heavy cream
  • 2 cups fresh cranberries, chopped

Hot Butter Sauce

  • 1/2 cup (1 stick) butter
  • 1/2 cup heavy cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F.

Cake

  1. Mix the flour, sugar, baking powder and salt in large mixing bowl.
  2. Add eggs, butter and cream. Mix well.
  3. Stir in the cranberries.
  4. Spoon into greased 10 inch Bundt pan and bake for 40 minutes.
  5. Remove to a serving plate.

Hot Butter Sauce

  1. Mix the butter, cream, sugar and vanilla extract in double boiler. Cook over hot water until heated through.
  2. Serve warm over the cake.
