Cranberry Pound Cake
Yield: 8 to 10 servings
Ingredients
Cake
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- Salt to taste
- 2 eggs
- 3 tablespoons butter
- 1 cup heavy cream
- 2 cups fresh cranberries, chopped
Hot Butter Sauce
- 1/2 cup (1 stick) butter
- 1/2 cup heavy cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Heat oven to 350 degrees F.
Cake
- Mix the flour, sugar, baking powder and salt in large mixing bowl.
- Add eggs, butter and cream. Mix well.
- Stir in the cranberries.
- Spoon into greased 10 inch Bundt pan and bake for 40 minutes.
- Remove to a serving plate.
Hot Butter Sauce
- Mix the butter, cream, sugar and vanilla extract in double boiler. Cook over hot water until heated through.
- Serve warm over the cake.
