Iced Almonds
Yield: 2 3/4 cups
Ingredients
- 1 1/2 cups blanched whole almonds, pecan halves, walnut halves or cashews
- 1/2 cup granulated sugar
- 2 tablespoons butter
- 1/2 teaspoon vanilla extract
Instructions
- Line a baking sheet with foil. Butter the foil, and set aside.
- In a heavy 8 inch skillet, combine nuts, sugar, and butter. Cook over medium heat, stirring constantly, for 9 minutes or until sugar melts and turns a rich brown color. Watch out for splatters.
- Remove from heat. Immediately stir in vanilla extract.
- Spread mixture onto the prepared baking sheet.
- Cool completely.
- Break into small clusters.
- Store tightly covered.
