Holiday Lime Cooler Cookies

Ring in the holidays with the refreshing and cool taste of citrus cookies.



Lime Glaze and Decoration


  1. Heat oven to 350 degrees F.
  2. In a large bowl, beat butter and 1 cup powdered sugar with electric mixer on medium speed, or mix with spoon.
  3. Stir in flour, cornstarch, lime peel and vanilla until well blended.
  4. Shape dough into 3/4-inch balls. Place about 2 inches apart on ungreased cookie sheet. Press bottom of glass into dough to grease, then dip into granulated sugar; press on dough balls until 1/4 inch thick.
  5. Bake for 9 to 11 minutes or until edges are light golden brown.
  6. Remove from cookie sheet to wire rack.
  7. Cool completely, about 30 minutes.
  8. In small bowl, stir together 1 cup powdered sugar and the lime juice. Stir in additional juice if necessary.
  9. Spread glaze over cookies.
  10. Squeeze drops of decorating gel on glazed cookies; drag toothpick through gel for marbled design.

Yield: 6 dozen cookies

High Altitude (3500-6500 ft) No change.

How To: When grating peel from a lime, grate just the green part; the white part will be bitter.

Variation: You can make an easy flavor twist by using lemon peel for the lime peel, lemon juice for the lime juice and yellow decorating gel for the green.

Did You Know: Powdered sugar and cornstarch create the melt-in-your-mouth quality of these cookies.

Special Touch: If you like using a cookie press, make lime ribbon cookies. Prepare dough as directed, but do not shape it into balls. Place dough in a cookie press with a ribbon tip, and form long ribbons of dough on ungreased cookie sheet; cut ribbons into 3-inch lengths. Continue as directed for baking.
