When grating peel from a lime, grate just the green part; the white part will be bitter.
Variation: You can make an easy flavor twist by using lemon peel for the lime peel, lemon juice for the lime juice and yellow decorating gel for the green.
Powdered sugar and cornstarch create the melt-in-your-mouth quality of these cookies.
Lime Ribbon Cookies: Prepare dough as directed, but do not shape it into balls. Place dough in a cookie press with a ribbon tip, and form long ribbons of dough on ungreased cookie sheet; cut ribbons into 3-inch lengths. Continue as directed for baking.
