Iced Spiced Ginger Bars

Instructions

  1. Heat oven to 350 degrees F.
  2. Grease a 15 x 10-inch or a 13 x 9-inch baking pan.
  3. In a large bowl, combine flour, sugar, baking soda, spices, salt, coffee, a cup butter, molasses and eggs. Beat for 2 minutes at medium speed. Pour into prepared pan.
  4. Bake for 25-30 minutes.
  5. Let cool.
  6. To make frosting: In a small saucepan over low heat, cook 1/3 cup butter until light golden brown, stirring constantly.
  7. Add confectioners' sugar, vanilla extract and water. Blend until smooth. (You may need to add a little more water.)
  8. Spread over cooled bars.
