Iced Spiced Ginger Bars
Ingredients
Bars
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1/8 teaspoon salt
- 1 cup hot coffee
- 1 cup butter or margarine
- 1/2 cup molasses
- 2 eggs
Frosting
- 1/3 cup butter
- 1/3 cup confectioners' sugar
- 1/2 teaspoon vanilla extract
- 3 tablespoons water
Instructions
- Heat oven to 350 degrees F. Grease a 15 x 10 inch or a 13 x 9 inch baking pan.
Bars
- In a large bowl, combine flour, sugar, baking soda, spices, salt, coffee, a cup butter, molasses and eggs. Beat for 2 minutes at medium speed. Pour into prepared pan.
- Bake for 25 to 30 minutes.
- Let cool.
Frosting
- In a small saucepan over low heat, cook 1/3 cup butter until light golden brown, stirring constantly.
- Add confectioners' sugar, vanilla extract and water. Blend until smooth. (You may need to add a little more water.)
- Spread over cooled bars.
