Peppermint Pattie Cookies



  • 2/3 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon milk
  • 1 (13 ounce) package York Peppermint Patties


  1. Beat butter and sugar; add egg and vanilla extract.
  2. In a separate bowl, stir together flour, cocoa, baking soda and salt.
  3. Add to butter mixture alternating with milk.
  4. Refrigerate dough 1 hour.
  5. Lightly grease cookie sheet.
  6. Heat oven to 350 degrees F.
  7. Remove wrappers from Peppermint Patties and cut the candy in half.
  8. Shape a small portion of dough around the peppermint pattie.
  9. Place on cookie sheet and lightly flatten.
  10. Bake for 10-12 minutes.
  11. Cool for 3 minutes before removing from the cookie sheet.

Yield: about 36 cookies
