Celestial Chicken




  1. In a paper bag, combine flour, salt, paprika and pepper.
  2. Add chicken pieces, a few at a time; shake to coat well.
  3. Heat oil in a heavy skillet. Add chicken; brown on all sides.
  4. Add onion, sherry and water. Cover; simmer 1 hour or until chicken is done and tender.
  5. Transfer chicken to a hot platter; keep warm.
  6. Blend sour cream and mayonnaise into pan juices.
  7. Add parsley. Heat through, but do not boil. Pour over chicken.

Yield: 4 servings
