Whip up this easy muffin mix that includes cinnamon, instant coffee and chocolate chunks and keep on hand in your pantry or give as a delicious gift.
Cappuccino-Chocolate Chunk Muffins
Heat oven to 375 degrees F. Beat 1 egg in large bowl; stir in 1 cup milk and 1/2 cup (1 stick) butter or margarine, melted. Empty muffin mix into bowl. Stir just until moistened. Spoon batter into 12 greased or paper-lined medium muffin cups, filling each cup 2/3 full.
Bake for 15 to 20 minutes or until a wooden pick inserted in centers comes out clean. Cool for 5 minutes; remove from pan. Cool completely on wire rack.
Yield: 1 dozen or 12 servings, 1 muffin each
