Cookies 'n' Cream Cheesecake Squares

Ingredients

  • 30 chocolate sandwich cookies
  • 1/4 cup butter or margarine, melted
  • 32 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 20 chocolate sandwich cookies, chopped

Instructions

  1. Heat oven to 350 degrees F.
  2. Place 30 cookies in a food processor container; cover. Process 30 to 45 seconds or until finely ground.
  3. Add butter; mix well.
  4. Press onto bottom of a 13 x 9-inch baking pan.
  5. Mix cream cheese, sugar and vanilla extract with electric mixer until well blended.
  6. Add eggs; mix until blended.
  7. Gently stir in 1 1/2 cups of the chopped cookies.
  8. Pour into crust.
  9. Sprinkle with remaining chopped cookies.
  10. Bake for 40 minutes or until center is almost set. Cool.
  11. Refrigerate 3 hours or overnight.
  12. Cut into squares.

Tip: line pan with foil for easy removal of squares.
