Cranberry Pecan Bars

Ingredients

Dough

  • 1 cup all-purpose flour
  • 2 teaspoons granulated sugar
  • 1/4 cup butter, cut into pieces
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Filling

  • 1/3 cup whipping cream
  • 1/2 cup light brown sugar
  • 2 tablespoons honey
  • 3/4 cup dried cranberries
  • 1 cup finely chopped pecans

Instructions

  1. Heat oven to 350 degrees F. Grease an 8 inch square baking pan and set aside.
  2. Combine flour, sugar and butter in a food processor. Process until mixture resembles coarse cornmeal.
  3. Add water and vanilla extract; pulse again.
  4. Press dough into prepared pan and freeze for 15 minutes.
  5. Bake dough for 15 minutes, until golden.
  6. In a small saucepan over medium heat, combine whipping cream, brown sugar and honey. Bring to a boil and continue boiling for 1 minute.
  7. Remove from heat.
  8. Stir in cranberries and chopped pecans.
  9. Spoon filling over crust, spreading evenly.
  10. Bake for 20 to 25 minutes until bubbling.
  11. Remove from oven and cool completely on wire rack.
  12. Cut into 16 squares.
