Fudge Coconut Squares

Ingredients

Squares

  • 1 cup butter or margarine, softened
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup baking cocoa
  • 1/2 cup chopped walnuts
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup shredded coconut

Icing

  • 2 cups confectioners' sugar
  • 1/4 cup baking cocoa
  • 5 tablespoons evaporated milk
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon vanilla extract

Instructions

  1. Squares: In a mixing bowl, cream butter and sugar.
  2. Add eggs and vanilla extract; mix well.
  3. Combine flour, cocoa and walnuts; add to the creamed mixture.
  4. Spread into a greased 13 x 9-inch baking pan.
  5. Bake at 350 degrees F for 30 minutes or until a wooden pick inserted near the center comes out clean.
  6. Combine condensed milk and coconut; carefully spread over the hot chocolate layer.
  7. Bake at 350 degrees F for 20 minutes or until coconut is lightly browned.
  8. Icing: Combine icing ingredients until smooth; spread over warm bars.
  9. Refrigerate for at least 1 hour before cutting.

Yields about 4 dozen.
