Glazed Mango Pie Bars



  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 egg, separated, yolk beaten with enough milk to equal 2/3 cup
  • 1 cup crushed corn flakes
  • 8 cups mangos, peeled and sliced
  • 1 cup granulated sugar
  • 2 teaspoons cinnamon, divided
  • 1/2 teaspoon nutmeg
  • Reserved egg white
  • 2 tablespoons granulated sugar
  • 1 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 to 2 tablespoons milk


  1. Combine flour and salt.
  2. Cut in butter until crumbly.
  3. Stir in egg yolk mixture until dough forms a ball. Divide in two.
  4. Roll one half on floured surface into a 15 x 10-inch rectangle.
  5. Place on ungreased pan.
  6. Sprinkle with crushed corn flakes.
  7. Layer mangos over crumbs.
  8. Combine 1 cup granulated sugar, 1 1/2 teaspoons of the cinnamon and nutmeg and sprinkle over mangos.
  9. Roll out remaining dough and place over mangos.
  10. Beat egg white until foamy and brush over top crust.
  11. Mix 2 tablespoons sugar and remaining 1/2 teaspoon cinnamon and sprinkle over crust.
  12. Bake at 350 degrees F for 50 to 60 minutes or until lightly browned.
  13. Stir together 1 cup confectioners' sugar, vanilla extract and milk and drizzle over warm crust.
  14. Cool and cut into bars of desired size.
