Juicy Pineapple Squares



  • 4 cups flour
  • 1 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 cup (2 sticks) butter or margarine
  • 2 eggs, beaten
  • 1/2 cup milk


  • 2 (15 ounce) cans crushed pineapple, juice included
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch


  1. Combine flour, sugar and baking powder, then cut butter into the dry ingredients.
  2. Mix in the eggs and milk.
  3. Form dough into a ball and chill.
  4. Combine filling ingredients and cook until thickened; let cool.
  5. Divide dough in half. Roll out to fit a jellyroll pan.
  6. Spread cooled filling over dough.
  7. Roll out remaining dough and cover filling with lattice strips.
  8. Bake at 350 degrees F for 30 minutes.
  9. When cool, dust with confectioners' sugar or drizzle with a thin confectioners' sugar glaze.
  10. Sprinkle with chopped nuts.
