Lemon Cream Bars

Ingredients

  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 1/2 cups flour
  • 1 cup rolled oats
  • 1 cup firmly packed brown sugar
  • 1 teaspoon baking powder
  • 2/3 cup butter, softened

Instructions

  1. Heat oven to 350 degrees F. Grease 13 x 9 x 2 1/2-inch pan.
  2. In small bowl, combine condensed milk and lemon juice; set aside.
  3. Lightly spoon flour into measuring cup; level off.
  4. In large bowl, combine remaining ingredients; mix at low speed until crumbly.
  5. Press half of crumb mixture into greased pan.
  6. Spread with lemon mixture.
  7. Sprinkle remaining crumbs over lemon mixture.
  8. Bake for 25 to 30 minutes until light golden brown. (Bars will be soft.)
  9. Cool; cut into bars.
  10. Store in refrigerator.

Yield: 2 to 3 dozen bars
