Nanaimo Bars



Bottom layer

  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 4 tablespoons cocoa
  • 1 egg, beaten
  • 2 cups Graham cracker crumbs
  • 1 cup coconut

Middle layer

  • 1/4 cup unsalted butter
  • 3 tablespoons cream
  • 2 tablespoons vanilla custard powder
  • 2 cups confectioners' sugar

Top layer

  • 4 ounces semisweet chocolate
  • 1 teaspoon butter


  1. Bottom Layer: Melt butter, sugar, cocoa in double boiler.
  2. Add egg and stir until cooked and thickened.
  3. Remove from heat.
  4. Stir in crumbs and coconut.
  5. Press into an 8-inch square pan.
  6. Middle Layer: Cream ingredients together. Beat until light.
  7. Spread over bottom layer.
  8. Top Layer: Melt over low heat.
  9. Spread over top of bars.
  10. Cool in refrigerator.
