Orange Marmalade-Coconut Bars

Ingredients

Base

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 egg yolk
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • Sprinkle of salt
  • 1 teaspoon vanilla extract

Filling

  • 1 egg white
  • 3 eggs
  • 1/2 cup granulated sugar
  • 1 cup orange marmalade
  • 1 cup flaked coconut
  • 1 cup chopped nuts
  • 1 teaspoon baking powder
  • 1/4 cup all-purpose flour

Instructions

  1. Base: Heat oven to 350 degrees F.
  2. Cream butter and sugar until creamy.
  3. Add egg yolk, vanilla extract and dry ingredients.
  4. Put into 13 x 9-inch pan.
  5. Bake for 20 minutes.
  6. Cool.
  7. Cover with filling.
  8. Reduce oven temperature to 325 degrees F.
  9. Filling: Beat egg white and whole eggs until thick and foamy.
  10. Add sugar; fold in marmalade, coconut, nuts, baking powder and flour.
  11. Bake at 325 degrees F for 45 minutes.
  12. Cool.
  13. Make frosting of 2 cups confectioners' sugar, 4 tablespoons butter and 4 tablespoons marmalade and spread over top.
  14. Chill and cut with sharp knife.

Makes about 64 pieces.
