Peach Streusel Bars

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter
  • 12 ounces peach preserves

Instructions

  1. Heat oven to 375 degrees F. Grease a 9-inch square baking pan.
  2. Combine the flour, sugar, lemon rind, nutmeg, and salt in a large bowl.
  3. Cut in butter with a pastry blender until mixture is crumbly. Set aside 1 cup.
  4. Pat remaining mixture evenly into prepared pan.
  5. Spread preserves evenly over top of dough in pan, leaving 1/4-inch border all around edges.
  6. Sprinkle with reserved flour mixture.
  7. Bake for 40 minutes or until lightly browned.
  8. Cool in pan on wire rack.
  9. Cut into 12 bars.
