Penuche Bars

Ingredients

  • 1/2 cup shortening or butter
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon vanilla extract
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut
  • 1 cup nuts, chopped

Instructions

  1. Heat oven to 350 degrees F.
  2. Mix together shortening, brown sugar and flour and press into a 13 x 9-inch pan.
  3. Bake for 10 minutes.
  4. Beat eggs, then mix in brown sugar and vanilla extract, beating well.
  5. Add flour, baking powder, salt, coconut and nuts. Put on top of baked mixture.
  6. Bake for 25 minutes.

Yield: 36 bars
