Pineapple Date Bars



  • 1 (20 ounce) can crushed pineapple
  • 2 cups chopped dates
  • 3 cups oats
  • 1 cup wheat germ
  • 1 cup coconut
  • 1 cup chopped walnuts
  • 3/4 teaspoon salt
  • 1 1/4 cups orange juice
  • 1/4 cup oil


  1. Combine pineapple and dates in a saucepan. Cook over medium heat until thickened, stirring frequently.
  2. In a large bowl, mix oats, wheat germ, coconut, walnuts and salt.
  3. Stir in juice and oil.
  4. Press half of the oat mixture into a greased 9 x 13-inch pan.
  5. Spread the pineapple mixture on top, and then sprinkle with the remaining oat mixture.
  6. Press down lightly.
  7. Bake at 350 degrees F for 30 minutes or until lightly browned.
  8. Cool.
  9. Cut into squares.
