Raspberry Dream Bars

Ingredients

Bars

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Raspberry preserves

Topping

  • 1 teaspoon vanilla extract
  • 2 eggs
  • 7 ounces coconut
  • 1 1/2 cups granulated sugar
  • 3 tablespoons melted butter

Instructions

  1. Bars: Mix the dry ingredients, then cut in the butter, eggs and vanilla extract.
  2. Press over the bottom and up the sides of a 13 x 9-inch pan.
  3. Spread raspberry preserves over the dough.
  4. Spread Topping over the preserves.
  5. Bake at 350 degrees F for 35 minutes.
  6. Topping: Beat all ingredients well.
