Tropical Cheese Bars

Cheese Layer



Instructions

  1. Crust: Cream butter, sugar and coconut rum, then beat in flour until blended.
  2. Stir in nuts.
  3. Pat into 10 x 15-inch pan.
  4. Bake at 350 degrees F for 10 minutes.
  5. Cool.
  6. Cheese Layer: Beat cheese, sugar, eggs and coconut rum until creamy.
  7. Stir in pineapple.
  8. Pour over baked crust.
  9. Mix nuts and coconut.
  10. Sprinkle over all.
  11. Bake at 350 degrees F for 20 minutes.
  12. Cool.
  13. Cut into bars.

Yield: 24 bars
