Cabernet Dark Chocolate Brownies

The most delicious brownies using dark chocolate, fresh cherries and Cabernet Sauvignon.

Cabernet Dark Chocolate Brownies recipe

Yield: 32 servings, 2 triangles each

Ingredients

  • 2 cups fresh cherries, pitted
  • 1 cup Woodbridge by Robert Mondavi® Cabernet Sauvignon
  • 1/4 cup unsalted butter (room temperature)
  • 1 ripe banana, mashed
  • 2 large eggs, lightly beaten
  • 1/2 cup water
  • 1 1/2 cups dark chocolate, chopped
  • 1 cup granulated sugar
  • 3/4 cup high quality unsweetened cocoa powder
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Soak cherries in Cabernet Sauvignon for at least 3 hours, making sure cherries are completely submerged in liquid.
  2. Heat oven to 350 degrees F. Line 9 inch square baking pan with parchment paper; coat with nonstick cooking spray.
  3. Mash butter with banana in large mixing bowl.
  4. Add eggs, one at a time.
  5. Whisk in water until mixture is smooth.
  6. In separate large bowl, combine dark chocolate, sugar, cocoa powder, flour and baking powder.
  7. Slowly add dry ingredients to butter-banana mixture, stirring to incorporate after each addition. Mix until batter is smooth and there are no lumps.
  8. Gently fold in cherries, reserving a few for garnish; stir batter to incorporate.
  9. Pour batter into pan. Bake for 40 minutes or until a wooden pick inserted in center comes out clean.
  10. Garnish with reserved cherries.
