Cocoa Coconut Brownies

Ingredients

  • 1/2 cup butter or margarine, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa or European style cocoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sweetened coconut flakes

Instructions

  1. In medium bowl, stir together butter, sugar and vanilla extract.
  2. Add eggs. Beat well with spoon.
  3. Stir together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended.
  4. Stir in coconut.
  5. Spread batter evenly into greased 8-inch square baking pan.
  6. Bake at 350 degrees F for 25 to 30 minutes or until brownies begin to pull away from sides of pan.
  7. Cool completely in pan on wire rack.
  8. Cut into squares.
