Cranberry Truffle Brownies

Ingredients

Brownie

  • 1 1/4 cups semisweet chocolate chips
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 tablespoons water
  • 1/2 teaspoon baking powder
  • 3/4 cup all-purpose flour

Truffle Topping

  • 1 cup semisweet chocolate chips, melted and cooled
  • 8 ounces cream cheese, softened
  • 1/4 cup confectioners' sugar
  • 1/3 cup cranberry sauce or seedless red raspberry jam

Glaze

  • 1/4 cup semisweet chocolate chips
  • 1 teaspoon solid shortening

Instructions

Brownie

  1. Melt chocolate chips with butter. Let cool.
  2. Beat eggs and sugar.
  3. Add chocolate mixture and water. Mix.
  4. Stir in baking powder and flour.
  5. Bake in a well greased and floured* 8 inch square or 9 inch round cake pan at 350 degrees F for 30 to 35 minutes.
  6. Remove from oven, turn out onto a cake platter and let cool.

Truffle Topping

  1. Beat cream cheese and confectioners' sugar.
  2. Add cranberry sauce and beat.
  3. Beat in melted chocolate chips.
  4. Spread on top of cooled brownies.

Glaze

  1. Melt chocolate chips with the shortening.
  2. Drizzle over the cream cheese layer.
  3. Chill for at least 2 hours before serving.
  4. Garnish with fresh sugared cranberries if desired.
