Dulce de Leche Brownies

Chocolatey brownies sweetened with a hidden layer of homemade Dulce de Leche and topped with chopped pecans.

Dulce de Leche Brownies

Yield: 48 brownies

Ingredients

Dulce de Leche

  • 1 (14 ounce) can sweetened condensed milk
  • 1 tablespoon corn syrup
  • 2 tablespoons Challenge Butter

Brownies

  • 1 cup (2 sticks) Challenge Butter, softened
  • 1 1/4 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 recipe (1 1/4 cups) Dulce de Leche
  • 1/2 cup chopped pecans

Instructions

Dulce de Leche

  1. Combine sweetened condensed milk and corn syrup in a large (2 to 2 1/2 quart) microwave safe bowl.
  2. Microwave on 50% power, stopping and stirring every 2 minutes initially then more frequently as needed during the middle of the cooking time for a total of 10 to 12 minutes or until the mixture is thick and caramel colored. It is important to watch the mixture as it cooks and stir frequently to avoid boil over. The mixture develops a somewhat curdled appearance that will smooth out when stirred.
  3. Whisk in butter and set aside.

Brownies

  1. Heat oven to 325 degrees F. Butter a 9 x 13 inch baking pan.
  2. Cream butter and sugar until fluffy.
  3. Beat in eggs and vanilla extract.
  4. Combine flour, cocoa and salt.
  5. Add dry ingredients into creamed mixture; mix until well blended.
  6. Spread 1/2 of mixture in the prepared pan. Drop spoonsful of Dulce de Leche evenly over this layer. Cover with remaining brownie batter. Sprinkle nuts evenly over the top.
  7. Bake for 35 to 40 minutes.
  8. Cool and cut into squares.
