Gooey St. Louis Brownies

Ingredients

Brownie

  • 3/4 cup butter or margarine (1 1/2 sticks)
  • 6 ounces unsweetened chocolate
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, lightly beaten
  • 1 1/4 cups flour
  • 1/2 teaspoon salt

Gooey Topping

  • 2 large eggs
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Grease 13 x 9-inch baking pan.
  2. Brownie: In 3-quart saucepan, heat butter and chocolate over medium-low heat until melted, stirring frequently.
  3. Remove saucepan from heat; stir in sugar and vanilla extract.
  4. Add eggs; stir until well mixed.
  5. Stir in flour and salt just until blended.
  6. Spread batter in pan.
  7. Gooey Topping: In medium bowl, with mixer at low speed, beat eggs, cream cheese, sugar and vanilla extract until well combined.
  8. Gently spread topping over brownie.
  9. Bake brownie for 55-60 minutes or until wooden pick inserted 2 inches from edge comes out almost clean and top turns golden brown.
  10. Cool in pan on wire rack, then cut into bars.
