Mint Julep Brownies

Ingredients

  • 4 ounces unsweetened chocolate
  • 1 cup butter
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons bourbon (optional)
  • 1 teaspoon peppermint extract
  • 1 tablespoon confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* a 13 x 9 x 2 inch baking pan.
  2. Combine chocolate and butter in a heavy saucepan; cook over low heat, stirring constantly, until chocolate melts.
  3. Let stand for 10 minutes.
  4. Beat eggs at medium speed with an electric mixer until thick and pale (about 2 minutes); gradually add sugar, beating well.
  5. Add chocolate mixture, flour and next 3 ingredients; beat at low speed 1 minute.
  6. Spoon into the prepared baking pan.
  7. Bake for 25 to 30 minutes or until done.
  8. Cool on a wire rack for 10 minutes.
  9. Sprinkle with confectioners' sugar.
  10. Garnish with mint leaves, if desired.
