Oat Cakes

This is a Canadian version of the Scotch favorite. They are delightful served on a dessert tray with cheese. This recipe makes a not-too-sweet cookie.

Instructions

  1. Measure and sift into a bowl the first 5 ingredients. Mix in rolled oats. Cut in shortening and blend in water (enough to make a workable stiff dough).
  2. Roll out on a floured board to 1/4 inch thick. Cut into squares or cut out rounds with cookie cutter.
  3. Bake at 375 degrees F for 15 minutes or until just brown.

Makes 12 dozen.
