Oat Cakes
This is a Canadian version of the Scotch favorite. They are delightful served on a dessert tray with cheese. This recipe makes a not-too-sweet cookie.
Yield: 12 dozen (144)
Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
- 3/4 teaspoon ground nutmeg
- 2 cups quick-cooking rolled oats
- 1 cup shortening or lard
- 1/3 cup cold water
Instructions
- Heat oven to 375 degrees F.
- Measure and sift into a bowl the first 5 ingredients. Mix in rolled oats. Cut in shortening and blend in water (enough to make a workable stiff dough).
- Roll out on a floured board to 1/4 inch thick. Cut into squares or cut out rounds with cookie cutter.
- Bake for 15 minutes or until just brown.
