Oat Cakes

This is a Canadian version of the Scotch favorite. They are delightful served on a dessert tray with cheese. This recipe makes a not-too-sweet cookie.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground nutmeg
  • 2 cups quick-cooking rolled oats
  • 1 cup shortening or lard
  • 1/3 cup cold water

Instructions

  1. Heat oven to 375 degrees F.
  2. Measure and sift into a bowl the first 5 ingredients. Mix in rolled oats. Cut in shortening and blend in water (enough to make a workable stiff dough).
  3. Roll out on a floured board to 1/4 inch thick. Cut into squares or cut out rounds with cookie cutter.
  4. Bake for 15 minutes or until just brown.
