Big Four Cookies

The big four are protein, iron, calcium, vitamin A.

Ingredients

  • 1/3 cup shortening
  • 1/3 cup sugar
  • 1/2 cup molasses
  • 1 egg
  • 1 cup sifted flour
  • 1/4 cup non-fat dry milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 cup grated raw carrots
  • 1 1/4 cups rolled oats
  • 1/4 cup raisins

Instructions

  1. Heat oven to 400 degrees F.
  2. Cream together shortening, sugar, molasses and egg.
  3. Sift dry ingredients together; stir into creamed mixture.
  4. Add grated carrot, rolled oats and raisins; mix well.
  5. Drop by rounded teaspoonsful onto lightly greased cookie sheets.
  6. Bake for 10 minutes, until golden brown.

Makes 6 dozen cookies.
