Caramel Cookies


  • 1 cup shortening
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract
  • 3 3/4 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda


  1. Cream shortening; gradually add sugars and cream thoroughly.
  2. Add eggs and vanilla extract.
  3. Sift flour, salt and baking soda. Gradually add to creamed mixture, mixing well.
  4. Press from a cookie press or drop by teaspoonsful onto ungreased cookie sheets.
  5. Bake at 375 degrees F for 10 to 12 minutes.
