Carrot Cookies

Ingredients

  • 1/2 cup butter
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs, well beaten
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups old-fashioned or quick-cooking rolled oats, uncooked
  • 1 cup raisins
  • 1 cup coarsely shredded carrots
  • 1 cup chopped nuts

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large mixing bowl with an electric mixer, beat butter, brown sugar and granulated sugar until well mixed.
  3. Add eggs; mix well.
  4. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg; add to butter mixture and mix well.
  5. Stir in oats, raisins, carrots and nuts.
  6. Drop dough by tablespoonsful onto an ungreased cookie sheets. Flatten slightly.
  7. Bake for 25 to 30 minutes, or until done.
  8. Transfer to racks to cool.
