Cashew Cookies with Browned Butter Icing

Ingredients

Cookies

  • 1 cup firmly packed brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sour cream
  • 2 cups salted cashews

Browned Butter Icing

  • 1/2 cup butter
  • 3 tablespoons evaporated milk
  • 2 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • Cashew nuts

Instructions

  1. Cookies: Cream brown sugar and butter.
  2. Add egg and vanilla and beat well.
  3. Add sifted flour, baking soda, baking powder and salt alternately with sour cream. Mix well.
  4. Carefully fold in cashews.
  5. Drop by teaspoon onto a greased cookie sheet.
  6. Bake at 350 degrees F for 12 minutes or until lightly browned.
  7. Cool and frost.
  8. Browned Butter Icing: Lightly brown butter in saucepan; remove from heat and add sugar and evaporated milk.
  9. Stir in vanilla extract.
  10. Frost cookies.
  11. Put 1 cashew on top of each cookie.

Makes 3 dozen.
