Cashew Crunch Cookies

Ingredients

  • 1 cup butter, softened
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 1/2 cup finely chopped cashews

Instructions

  1. Heat oven to 350 degrees F. Lightly grease a cookie sheet.
  2. Beat butter at medium speed with electric mixer; gradually add sugars, mixing well.
  3. Add egg and vanilla extract; beat well.
  4. Combine flour, baking soda and cream of tartar; gradually add to creamed mixture, mixing after each addition.
  5. Stir in cashews.
  6. Drop cookie dough by rounded teaspoonsful onto the prepared cookie sheet; bake for 10 to 12 minutes or until lightly browned.
