Cookie Recipes
Cherry Almond Chunky Chews
Yield: 7 dozen
Ingredients
- 1 cup shortening
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 eggs
- 3/4 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 1/2 cups flaked coconut
- 3/4 cup chopped almonds
- 1 (16 ounce) jar maraschino cherries, drained and halved
Instructions
- Heat oven to 350 degrees F. Lightly grease a cookie sheet.
- In a mixing bowl, cream shortening and sugars.
- Add eggs, one at a time, beating well after each one.
- Add extract and mix well.
- Combine flour, baking soda and salt then add to cream mixture gradually.
- Stir in coconut and nuts.
- Drop by rounded teaspoonsful 2 inches apart onto the prepared cookie sheet.
- Place a halved cherry in center of each cookie.
- Bake for 12 to 14 minutes or until lightly browned.
- Remove to a cooling rack.
