Cherry Almond Chunky Chews

Ingredients

  • 1 cup shortening
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 3/4 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 cups flaked coconut
  • 3/4 cup chopped almonds
  • 1 (16 ounce) jar maraschino cherries, drained and halved

Instructions

  1. Heat oven to 350 degrees F. Lightly grease a cookie sheet.
  2. In a mixing bowl, cream shortening and sugars.
  3. Add eggs, one at a time, beating well after each one.
  4. Add extract and mix well.
  5. Combine flour, baking soda and salt then add to cream mixture gradually.
  6. Stir in coconut and nuts.
  7. Drop by rounded teaspoonsful 2 inches apart onto the prepared cookie sheet.
  8. Place a halved cherry in center of each cookie.
  9. Bake for 12 to 14 minutes or until lightly browned.
  10. Remove to a cooling rack.
