Coffee Cookies

Ingredients

• 3/4 cup shortening
• 2 cups firmly packed brown sugar
• 2 eggs
• 4 cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon lemon extract
• 1 cup strong coffee

Instructions

1. Heat oven to 350 degrees F. Grease a cookie sheet.
2. Beat shortening, sugar and eggs until creamy.
3. Add dry ingredients alternately with coffee.
4. Add lemon extract.
5. Drop by teaspoon onto prepared cookie sheet.
6. Bake for 8 to 10 minutes.
7. Drizzle with confectioners' sugar icing flavored with lemon.

Notes

These cookies freeze well.
