Lemon Cookies
Yield: 5 dozen
Ingredients
- 1 cup butter
- 1 cup vegetable oil
- 1 cup granulated sugar
- 1 cup confectioners' sugar
- 2 teaspoons lemon extract
- 2 eggs
- 4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 1 teaspoon baking soda
Instructions
- Heat oven to 375 degrees F.
- Combine first 4 ingredients.
- Add lemon extract and eggs. Beat for 1 minute.
- Add remaining ingredients, which have been mixed together.
- Drop by teaspoonsful onto ungreased cookie sheet.
- Bake for about 10 to 12 minutes.
