Lemon Cookies

Yield: 5 dozen

Ingredients

• 1 cup butter
• 1 cup vegetable oil
• 1 cup granulated sugar
• 1 cup confectioners' sugar
• 2 teaspoons lemon extract
• 2 eggs
• 4 cups all-purpose flour
• 1 teaspoon cream of tartar
• 1 teaspoon salt
• 1 teaspoon baking soda

Instructions

1. Heat oven to 375 degrees F.
2. Combine first 4 ingredients.
3. Add lemon extract and eggs. Beat for 1 minute.
4. Add remaining ingredients, which have been mixed together.
5. Drop by teaspoonsful onto ungreased cookie sheet.
6. Bake for about 10 to 12 minutes.
