Oatmeal Cookies

Ingredients

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup shortening
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups quick oatmeal
  • 1/2 cup chopped nuts

Instructions

  1. Simmer raisins and water for about 20 minutes.
  2. Drain liquid from raisins into measuring cup. Add enough cold water to make 1/2 cup.
  3. Heat oven to 350 degrees F. Lightly grease a cookie sheet.
  4. Cream shortening and sugar.
  5. Add eggs, one at a time, beating well after each addition.
  6. Add vanilla extract and raisin liquid.
  7. Sift flour, baking powder, baking soda, salt and cinnamon. Stir into wet mixture.
  8. Add oatmeal, raisins and nuts. Mix well.
  9. Drop by teaspoonful onto the prepared cookie sheet about 2 inches apart.
  10. Bake for 10 to 12 minutes.
