These lemony Ooey Gooey Lemon Cookies won't last long in your cookie jar!

Ooey Gooey Lemon Cookies

Ingredients

  • 1/2 cup salted butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon fresh lemon zest
  • 1 1/2 cups granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 2 1/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 cup confectioners' sugar, divided

Instructions

  1. Heat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  2. In a large bowl using a hand-held mixer, beat butter, cream cheese, lemon zest, and granulated sugar until blended.
  3. Add egg and vanilla and lemon extracts.
  4. Combine together the flour, baking powder and 1/2 cup confectioners' sugar. With the mixer on low, gradually beat into creamed mixture.
  5. Using a 2 tablespoon cookie scoop, scoop dough, roll into balls and then roll in 1/2 cup confectioners’ sugar. Place approximately 6 dough balls on prepared cookie sheets (cookies will spread).
  6. Bake until they no longer appear wet on top, 8 to 11 minutes.
  7. Remove from oven and let set on the cookie sheet for about 5 minutes.
  8. Place on cooling racks to cool completely.
