Peanut Butter Oatmeal Chocolate Chip Cookies

These Peanut Butter Oatmeal Chocolate Chip Cookies offer the best of three worlds as far as favorite cookies are concerned.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 (12 ounce) package (2 cups) semisweet chocolate chips (Ghiardelli are great)
  • 1 1/2 cups quick-cooking oats

Instructions

  1. Heat oven to 375 degrees F.
  2. Combine flour, baking powder and salt in small bowl.
  3. In large mixer bowl, beat butter, peanut butter, granulated sugar, brown sugar and vanilla extract until creamy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Gradually beat in flour mixture.
  6. Stir in chocolate chips and oats.
  7. Drop by rounded tablespoon onto ungreased baking sheets.
  8. Bake for 10 to 12 minutes or until light golden brown.
  9. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
