Persimmon Cookies

Ingredients

  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 1 egg
  • 1 cup persimmon pulp
  • 1 cup raisins
  • 1 cup nuts, chopped
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Cream sugar and shortening.
  2. Slightly beat egg and add to creamed mixture.
  3. Add persimmon pulp.
  4. Mix dry ingredients with raisins and nuts; add to wet mixture.
  5. Drop by tablespoonsful onto cookie sheet.
  6. Bake for 20 minutes at 350 degrees F or until lightly browned.

Makes 2 dozen cookies.
