Persimmon Cookies

Yield: 2 dozen cookies

Ingredients

  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 1 egg
  • 1 cup persimmon pulp
  • 1 cup raisins
  • 1 cup nuts, chopped
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Heat oven to 350 degrees F.
  2. Cream sugar and shortening.
  3. Slightly beat egg and add to creamed mixture.
  4. Add persimmon pulp.
  5. Mix dry ingredients with raisins and nuts; add to wet mixture.
  6. Drop by tablespoonsful onto cookie sheet.
  7. Bake for 20 minutes or until lightly browned.
