Persimmon Cookies
Yield: 2 dozen cookies
Ingredients
- 1/2 cup shortening
- 1 cup granulated sugar
- 1 egg
- 1 cup persimmon pulp
- 1 cup raisins
- 1 cup nuts, chopped
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Heat oven to 350 degrees F.
- Cream sugar and shortening.
- Slightly beat egg and add to creamed mixture.
- Add persimmon pulp.
- Mix dry ingredients with raisins and nuts; add to wet mixture.
- Drop by tablespoonsful onto cookie sheet.
- Bake for 20 minutes or until lightly browned.
