Pineapple Shortbread Cookies

Ingredients

  • 1 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 egg, beaten
  • 2 tablespoons frozen orange juice concentrate
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 (8 1/2 ounce) can crushed pineapple, drained

Instructions

  1. Thoroughly blend butter and cream cheese; slowly add sugar.
  2. Add egg and juice concentrate. Mix well.
  3. Sift together flour and baking powder.
  4. Mix into cream cheese mixture.
  5. Fold in pineapple.
  6. Chill for 30 minutes.
  7. Heat oven to 375 degrees F before proceeding.
  8. Drop by tablespoons onto greased cookie sheet.
  9. Bake for 10 to 12 minutes or until lightly browned.
  10. Cool in pan.
