Ranger Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup Rice Krispies
  • 1 cup quick cooking oats, uncooked
  • 1/2 cup shredded coconut

Instructions

  1. Heat oven to 350 degrees F. Spray a cookie sheet with nonstick spray.
  2. In a medium mixing bowl, combine first four ingredients; set aside.
  3. With electric mixer, beat margarine and sugars until well combined.
  4. Add egg and vanilla extract. Beat well.
  5. Add flour mixture and mix until well combined.
  6. Stir in Rice Krispies, oats and coconut.
  7. Drop by level tablespoons onto the prepared cookie sheet.
  8. Bake for about 12 minutes or until golden.
  9. Cool on wire racks.
  10. Store in an airtight container.
